This was my Christmas/winter cake creation..
It has an solid layer of 'ice' on top made from.. melted Fox's glacé mints!
It's difficult to see in photographs but the cake is layered with butter icing (in the middle), blue glacé icing (on the top) and then the melted sweets.
I basically lined a round cake tin with baking paper and put about 15 mints in the tin.. then just baked them in the oven! for about 10 minutes or so and they melt and after a couple of minutes cooling you get a solid circle of glacé mint. Which I just placed on top of the iced cake. Its a great effect, and you get all these little bubbles in it so it looks like water!
I had to take it off to cut the cake though...
The penguins and decorations on top are ready-to-roll icing/sugarpaste bar the cocktail umbrella...
All together this took me about 2 hours i think..
